Elles constituent des facteurs importants dans la fabrication des produits carnés (7). La chair de thon, les ingrédients et les additifs suivants : chair de poulet, lait en poudre, jaune d’oeuf, concentré de tomate, carotte et épices, ont aussi été respectivement utilisés comme liant, épaississant, émulsifiant, colorant et assaisonnement. Les résultats obtenus ont montré que la chair de thon possède un bon pouvoir de rétention d’eau (18,89±0,06 %), une bonne solubilité (26,52±0,1%) et capacité émulsifiante des protéines (92,32±0,01%). L’émulation obtenue est stable à 80°C pendant 20 mn. Parallèlement à l’étude des propriétés fonctionnelles de la chair de thon celle de la qualité microbiologique, sensorielle et nutritionnelle des saucissons obtenus, a aussi été faite. Les résultats obtenus ont été satisfaisants. Le développement de ce produit pourrait aider à valoriser le thon au Sénégal et à élargir la gamme des produits à base de poisson et produits halieutiques Exemplaires

Schenck and G.S. Sm.) Sieverd., G.A. Silva and Oeh., Funneliformis mosseae (T.H. Nicolson and Gerd.) C. Walker and A. Schüssler. and Rhizoglomus intraradices (N.C. Schenck and G.S. Sm.) Sieverd., G.A. Silva and Oehl.), and a mixed inoculum of these AMF on root colonization, biomass production, mycorrhizal dependency (MD) and shoot mineral contents of two salt tolerant grasses Leptochloa fusca L. Stapf and Sporobolus robusts Kunth. After four months of growth in a sterilized soil and greenhouse conditions, grasses inoculated with AMF showed significantly higher total biomass production than non-inoculated seedlings. MD and shoot mineral contents (especially P) varied with AMF host plants. Maximum values of MD (13%) were observed in L. fusca and S. robustus seedlings when inoculated with R. intraradices and F. mosseae, respectively. Only P contents were higher in the S. robustus/mixed-AMF combinations than the other treatments. These results demonstrate the potential benefits in our experimental conditions of AM inoculation for improving growth and P acquisition particularly in the L. fusca/ F. mosseae and S. robustus/mixed-AMF combinations. The effects of arbuscular mycorrhizal fungal (AMF) inoculum (M) individually and in combination with rhizobia (R) and Pseudomonas fluorescens (Pf) were investigated on the growth and nutrition of A. senegal seedlings. In glasshouse conditions, all the inocula except Pf significantly enhanced A. senegal plant growth after 6 months in a non-sterile soil from Dahra (Senegal). However, no significant increase in shoot N content was recorded, whereas the application of MR, MPf and MRPf significantly improved shoot P content, and that of MR and MPf, shoot K content. The nodule number was significantly augmented by rhizobial inoculation and the root mycorrhizal colonization rate by MR, MPf and MRPf treatments. Soil spore density was increased by all inoculants except MPf, and soil AMF hyphal length by M, R and MRPf treatments. The inoculation with Pseudomonas and MPf significantly stimulated soil acid phosphatase activity, but no significant effect was observed on soil fluorescein diacetate (FDA) activity. Thus, the dual inoculation with AMF and R can be beneficial to A. senegal growth under non-sterile soil, where nutrients particularly P and N are often deficient Exemplaires
